Best decaf to date. Delicious coffee and prompt delivery.

The best decaf I have tried by far and similar in taste to the Christmas blend my all-time fav and its closest rest-of-the-year cousin Ethiopia Tefera Kebede Yirgacheffe. I often mix the two for a gentle afernoon uplift.

I have had a random selection of decaf on subscription for years now, enjoying the variety, but I have finally settled on the Mexico Co-op Tierra Libertad Decaf as my 'go to' coffee. It's perfect in the mornings but I'd have no problem firing up the machine for another later in the day!

Wow. We enjoyed this coffee so much. We have espresso grind for our little home machine, and the crema is beautiful golden brown, whilst the coffee is black and sweet smelling. Highly recommend.

Sam

So tried all the decafs except Ugandan and the one from Peru, I found this one to be pretty interesting and was a favourite in my house. I enjoyed its noticeable sweetness and would re order, 8/10

I was concerned when I opened the packet as there was little or no aroma from these beans. And although I got little crema the taste was fantastic! Smooth and balanced and with that buttery taste which makes a lovely latte
Alan

Lovely middle of the road coffee, smooth, balanced and very pleasant to drink. Very nice through our filter coffee maker at breakfast, but equally enjoyable black, brewed through an aeropress in the evening. Enjoy with cream or just black. Delicious!

Alan
I really like Mexican coffees, and this one certainly doesn't disappoint. Brewed V60 or automatic filter brewer, this is a lovely smooth balanced coffee, with a soft body, reminiscent of butter. Well worth a try for any brew method I would think!
Clive Reed

If you drink decaf then you will not believe this coffee, the taste, biody and smoothness of the cup is outstanding, Coffee Real roast some stunning decafs but this offering is off the scale, I brew via V60 using 30g of coffee and brewing 485g total.

Additional Information

This Swiss Water Decaf coffee comes from a group of small producers called Tierra Libertad in a very hard to get to place called Angel Diaz in the area of Siltepec, Chiapas State, Mexico. We were here in Jan 2017.

Our meeting was with Rayder Peter Hernández who farms 10Ha  of Red / Yellow Bourbon,  Sabira De Leon, farming 10Ha of Bourbon, Herminia Hernández the daughter of Sabira farming 1Ha of outstanding Bourbon, Gregorio Munaz Angel farming 9Ha of Bourbon and Arabe and Julio Roblero Vazquez, farming 3Ha of Bourbon.

It basically took us three days of flying and driving from Mexico City to Tuxtla Gutiérrez and then on to Angel Diaz - what took the most time was around 47 miles of dirt and rock track that took us up to 1900 meters ( 6230 feet) which is where these guys farm and now you can drink their new crop this year 2017.

Angel Diaz is locatied in the central part of Chiapas which holds the cloud forest and middle rain forest of the Soconusco zone around the Novillero River.

Chiapas borders the Guatemalan border and thus the coffee from this area in our opinion is little brighter and sweeter than the rest of the other growing areas in Mexico – bearing more resemblance to the Huehuetenango growing areas of Guatemala.

The cherries are as selectively picked as possible and then an additional pre-sorting happens before wet processing on  the farm to make double sure that only the best and ripest cherries are processed. The coffee is wet processed which consists of depulping the cherries and removing the fruit and some of the mucilage on the beans through a washing process which is done on the day of harvest.

The coffee is left overnight in fermentation tanks to complete the fermentation process. After this the coffee is washed, and the parchment is carefully set on the patios for sun-drying.

Decaffeination Process Swiss Water

The Swiss Water Method of Decaffeination was introduced by The Swiss Water Decaffeinated Coffee Company of Burnaby, British Columbia, Canada in 1988

This method is different in that it does not directly or indirectly add chemicals to extract the caffeine. Rather, it relies entirely on two concepts - solubility and osmosis - to decaffeinate coffee beans.

The process begins by immersing a batch of green coffee beans in very hot water in order to dissolve and extract the caffeine. The water is then drawn off and passed through an activated charcoal filter.

The porosity of this filter is sized to only capture larger caffeine molecules, while allowing smaller oil and flavour molecules to pass through it. However, this extraction process will also extract desirable oils and other solids from the beans, resulting in beans with no caffeine and no flavour in one tank, and caffeine-free but with flavour water in another tank.

The Swiss Water process method attempts to overcome this difficulty by first discarding the flavourless caffeine-free beans, and then reusing the flavour-rich water to remove the caffeine from a fresh batch of coffee beans.Water saturated in this way is referred to as green coffee extract or GCE. It is created using a separate batch of green coffee beans, which are immersed in water and then discarded. In a pre-loading tank, water, cane sugar and formic acid are mixed and heated and used to preload carbon filter columns.

The GCE is then filtered over the columns to extract caffeine from it. A fresh batch of green coffee beans is then immersed in the GCE to remove caffeine but retain other components. The other components can be retained because the water is already saturated with flavour ingredients, therefore, the flavours in this fresh bath cannot dissolve - only caffeine moves from the coffee beans to the water.

This results in decaffeination without a massive loss of flavour. The process of filtering the GCE to remove caffeine and immersing the beans is repeated until the beans are 99.9% caffeine free by mass, meeting the required standard. This process takes 8 to 10 hours
