Cupping profile and tasting notes

 The cup exhibits - bright fruitiness with a aromatic complexity with a thick juicy mouthfeel.

A vibrant and fairly multifaceted blend which stands up to milk very well, and is effortlessly enjoyed straight.

Perfect Secret comes from a completely new stable block.

We were given a brief by new customer (you know who you are, you know the pain you put us through) "it needs to be a pleasant and consistent espresso – not too demanding – but with marked complexity – and an interesting finish".

After much tweaking, tasting and fine-tuning we settled on the bright fruitiness and complexity of an Ethiopian matching up to the sweet rich earthiness of an organic Sumatran and  the aromatic notes of a little known Kenyan which makes for a vibrant and fairly multifaceted blend without being awkward. It’s dark with a nice thick juicy mouthfeel which stands up to milk very well, and is effortlessly enjoyed straight.

It is also proving to be very popular drip served.

Brewing Notes:

The espresso brewing system used, the number brewing parameters and methods employed pulling an espresso shot will have an influence on the coffee's flavour and mouthfeel.

We provide brewing benchmarks or brewing range indicators to all of our espresso blends to provide as much data as possible to gain the highest degree of consistency from the roastrey cupped shot to the baristas shot. These benchmarks and/or brewing range indicators are just that – all they do is suggest what to be looking for to get near to the roastery cupping shot as possible.

Where a brewing temperature and/or a shot time is not indicated in the notes it will be our standard set-up: - we use La Marzocco GB5 set at a temperture of 93.33C (200f) with a shot time of 20-23 seconds as from the first drop appearing from the portafilter. We dose our portafilters by levelling which is usually 18g of coffee per double shot.

Roasting Information:

We place espresso quality way before convenience - our espresso blends are never pre-blended before roasting thus ensuring the ideal roast profile is reached for each varietal used in a blend.

At last - I have found this excellent espresso, from a company who really know how to care for their customers, (thanks for your support) I would not buy coffee from anywhere else. The only problem I have now is sleeping!
