Cup profile and tasting notes

The cup exhibits - very complex fruit flavour notes including ripe peach, cox apples and papaya. Juicy bright mouthfeel - medium to full body with a pleasant and long aftertaste with a sweet final note.  We love this coffee.

Finca Santa Marta has been recognized and applauded by the national and international coffee community and has been continually placed in the Honduran Cup of Excellence® (COE) – winning the COE in 2006 with its outstanding Pacamara. With out question this is a top farm and Catuai is a top coffee.

Approximately 121 acres (49 hectares) are planted with coffee cultivars at elevations ranging from 4,100 feet (1,250 meters) to 4,850 feet (1,480 meters). The farm represents a unique microclimate with diverse shade trees, tropical rainforest conditions, and is irrigated by natural spring waters.

The Finca is located on the outskirts of Pico Pijol, which has been declared a National Park and Forest Reserve by the Honduran Government. Every effort has been made to be in tune with national conservation efforts, changing its washing methods and management of waste accordingly in its wet mill. Additionally professional forest management and conservation methods are employed to protect the native trees where the coffee crops are grown and more than 200 hardwood trees.

The Finca is committed to social responsibility and supports the local community which comprises of around 60 families. Each familiy live on grounds donated by the Finca, which includes the land for the community school. Located on the outskirts of the famous Parque Nacional Pico Pijol (national forest preserve), near the village of Tegucigalpita, municipality of Victoria, State of Yoro. Pico Pijol is situated on the flanks of Montaña de la Flor (Mountain of the Flower), one of the major peaks of La Cordillera Central with an altitude of 7,550 feet (2,300 meters).

The Finca operates year round with 31 employees, with daily operations supervised by Juan Rodriguez and technical expertise provided by Ing Silvio Zepeda. During the harvest season, from January to March where staffing increases to 150 workers.

Bought this coffee after trying the Santa Marta Pacamara. This is on a par but with a more crisp taste - I get the notes in the cup via filter drip. Outstanding,
