Cupping profile and tasting notes

The cup exhibits - consistent and citric, with hints of green tea-like character and a touch of honeysuckle in the aromatics. Very clean and refreshing after-taste.

The last washed Sidamo Lot we had in the roastery was back in 09 and it was truly amazing - other Lots since then have always been lacking / disappointing in content (too many distractions going on) but now we have stumbled upon a Sidamo that has a cup profile that captures all the up front floral fragrances, perfumed aromas and the intense citric notes that you would expect from a fine cup Sidamo. This is mainly due to the additional stage of defect removal.

Defect removal allows the cup to maintain a uniform character while preserving the refreshing and clean aftertaste of a pristine washed coffee.

The Sidamo growing region is located in the highlands, south of the capital city of Addis Ababa. Ethiopia has a tremendous tradition of coffee and innumerable heirloom varieties that still grow wild to this day. Traceability to farms or non-union co-ops is extremely difficult in this country, partially because of the government’s nationalization program and auction system, but also due to the fact that most harvesting is either wild grown forest coffee or small back garden plots.

Bought this coffee for someone as a Christmas present, but I ended up giving them a book. It was just to good to pass-up.

A light amber colour and silky, very interesting tropical acidity. It makes a consistently fine cup of coffee, no doubt aided by its very clean character.
