We just love coffee from El Salvador and this farm produces outstanding quality from one of the best growing regions in El Salvador. - the farm is located in the Cerro Cachio hills at 1700m in the Apaneca mountain range, which forms part of the Mesoamerican Biological Corridor.
In the cup you get a wonderful sweet caramel toffee taste that develops into a sweet creamy milk chocolate with a vanilla after taste that lingers and lingers. Its very muted acidity makes it ideal for a single estate espresso, as long as you like your espresso nice and sweet.
The coffee is shade grown with the peak harvest season is through the months of December to March when the farm employs around 380 people from 73 families.
The ripe coffee cherries are hand picked and collected in traditional hand weaved baskets by pickers who have been specially trained to select cherries that are only at their absolute best and fully ripe. The cherries are then pulped and sun dried on clay patios, stored in wooden bins where they are left to mature before hulling. The processing mill hand sorts the coffee to filter out any unwanted elements and the different lots are cupped to insure consistent quality throughout.
The Herrera family offer considerable support to farm workers and the local community, with education for children and family health clinics with medical facilities improving the basic quality of life for many families. In 2001 the creation of a Primary Health Programme was set up in conjunction with the National Health Program primarily for children under 5 years of age and people with nutritional deficiencies and those in need of special treatments. The programme also provides free medicines and vitamins to workers and their families.
The family are also very committed to sustainable practices in order to protect and preserve the natural environment. Coffee shrubs at Shekina
are grown under a canopy of trees which enriches and conserves the soil, contributes to the forest conservation and provides an important habitat for birds and other wildlife.
