Cup profile and tasting notes

The cup exhibits - mild acidity with a medium body and a clean cup - well balanced and rounded - flavour notes of chocolate and vanilla push through in the mid range - as the cup develops you get the sultry sweetness of fresh tobacco with a nutty background.

The Andrade Brothers have run Fazenda Saõ Silvestre since 1991. The Estate is located in the Cerrado - a vast tropical savannah of Brazil, which according to the World Wide Fund for Nature is biologically the richest savannah in the world and accounts for 20% of Brazil’s landmass.

The region's typical climate is hot, but semi-humid, with a pronounced seasonality marked by a dry winter season from May through October.

The main varieties grown on the Estate are the Yellow Icatú, Yellow Bourbon and Típica, which thrive in the enriched volcanic soil. The beans are harvested and prepared by the pulped natural process, a method made famous by Brazil which produces some of the best pulped natural coffees in the world.

Drying can be made totally sun dried or made in two stages - with the beans initially sun dried to bring the moisture content down to approximately 20% after which the drying can be finished in mechanical dryers, bringing the moisture content of the beans to a maximum of 12%. Once the coffee is dried it is stored in silos, still protected by the parchment or husk.

After a period of rest the coffee is milled and sorted for the trip to its final destination - BSCA members have a complete coffee quality lab at the farm, where physical and sensorial analysis is undertaken by qualified cuppers.

The nutrients taken from the soil by the coffee trees are replenished by organic compost, maintaining the natural fertility of the soil.
