The cup exhibits - creamy smooth with a little bright acidity and a lovely sweetness.
Good depth, body and crema. Takes milk well, some in the camp say very well.
6am is a blend with a cracking character.
A blend with nice complexity and a little brightness brought about by the Ethiopian Harrar, but nothing too convoluted at 30%, some sweet fruit from the Finca El Bosque at 30% and 40% Sumatra Aceh Tengah Organic base to push out the richness and provide depth / body.
Firm favourite in the Coffee Real camp and with many of you it would seem - there is no question that the Harrar gives this blend its personality – although not too overbearing - a firm finish and very authentic.
Brewing Notes:
The espresso brewing system used, the number brewing parameters and methods employed pulling an espresso shot will have an influence on the coffee's flavour and mouthfeel.
We provide brewing benchmarks or brewing range indicators to all of our espresso blends to provide as much data as possible to gain the highest degree of consistency from the roastrey cupped shot to the baristas shot. These benchmarks and/or brewing range indicators are just that – all they do is suggest what to be looking for to get near to the roastery cupping shot as possible.
Where a brewing temperature and/or a shot time is not indicated in the notes it will be our standard set-up: - we use La Marzocco GB5 set at a temperture of 93.33C (200f) with a shot time of 20-23 seconds as from the first drop appearing from the portafilter. We dose our portafilters by levelling which is usually 18g of coffee per double shot.
Roasting Notes:
We place espresso quality before convenience – our espresso blends are never pre-blended before roasting thus ensuring the ideal roast profile is reached for each varietal used in a blend.

Russ Evans | 23/09/2011One of the many great things about Coffee Real are the highly accurate cupping notes and tasting profiles which make it frequently hard to add anything more than has already been described! This is a very good espresso and the 3 stars is because I didn't think it was that good with milk. Worth a try.

I normally brew mine on a stove top mokka then add it to frothed up milk and some sugar, such a intense taste that certainly cuts through the milk. cant wait to try another blend...well roasted COFFEE REAL!
